Its Origins

After gaining experience in Alsace and Burgundy, Bernard Fouquet established his own winery in 1982 in the Loire, focussed on the Chenin Blanc grape. He soon created a trial and error knowledge of his terroir and by the mid-late 1990s, when Vouvray had a series of stellar vintages, Fouquet wines were among the foremost in the world market for the price. With an emphasis on purity and use of stainless steel, Fouquet aims to capture his respective terroir characteristic in each style: mainly calcareous clay in his dry and dessert wines, mainly flint/silica in his demi-sec and sparkling wines. Today Fouquet’s labels remain inexpensive but are considered to be among Vouvray’s best at any price.

"The 2021 Cuvée de Silex from Bernard Fouquet’s Domaine des Aubuisières is a lovely young wine that harkens back to the days of yore, as the wine comes in this year at a nicely chiseled twelve percent octane! The beautiful bouquet is vivid in its precision, offering up scents of lemon, quince, white flowers, flinty minerality, citrus peel and a touch of lanolin. On the palate the wine is bright, zesty and full-bodied, with a lovely core, stellar mineral drive and cut, laser-like focus and a long, complex and energetic finish. This is stunning Vouvray Sec!"

"Vibrant and quite richly textured with notes of pear and apple with good length and balance. I expect it to develop further in bottle. A success for 2021, Cuvée Silex is well suited to chicken and pork dishes. In a career spanning more than 30 years, Bernard Fouquet established his 30ha domaine as one of Vouvray’s best. Fouquet has now retired and Charles Lesaffre has taken over. He used to be commercial director of Vignobles Feray, which includes Château Moncountour in Vouvray."

"50-60 year-old Chenin vines on clay limestone. 80% hand-picked. Fermentation and élevage in temperature-controlled tanks, six months on lees. No malo. RS 8.5 g/l. Under Screwcap. Tingling. Delicate, chalky, pings and zings. Lime and apricot, syrup-on-stones, silk ribbons wrapped deftly around honeysuckle florals. Oranges and so much fruit that it tastes almost like an off-dry Riesling. Handles chilli heat and lime and steak very very well. (Also good with the orange and feta lentil dish.) This is an intense, gorgeous, succulent wine that is different from most Vouvrays of this intensity in that it has a lightness, a slender raciness, as if it's a lovechild of the Mosel and Vouvray.
