Here conditions lend themselves to a complex and layered expression of Chenin, dry but with a subtle richness that is enhanced by fermentation and aging in clay amphorae. Its Origins

After gaining experience in Alsace and Burgundy, Bernard Fouquet established his own winery in 1982 in the Loire, focussed on the Chenin Blanc grape. He soon created a trial and error knowledge of his terroir and by the mid-late 1990s, when Vouvray had a series of stellar vintages, Fouquet wines were among the foremost in the world market for the price. With an emphasis on purity and use of stainless steel, Fouquet aims to capture his respective terroir characteristic in each style: mainly calcareous clay in his dry and dessert wines, mainly flint/silica in his demi-sec and sparkling wines. Today Fouquet’s labels remain inexpensive but are considered to be among Vouvray’s best at any price.

"Both floral and stone fruit notes define the nose, with a subtle hint of quince. A precise, taut wine that has made good use of its zesty acidity giving balance and freshness to the finish. It has good potential to develop in bottle and age well. The vines are planted on clay limestone with the grapes harvested by machine and then vinified in clay amphorae, with malolactic fermentation completed. It’s then matured in amphorae for six months. Domaine des Aubuisières was founded in 1978 by Bernard Fouquet. He soon established the domaine as one the leading producers in Vouvray.
